I just got back from a great trip to Central America, and visited a truly inspiring place called Earth University, in Guacimo, Costa Rica. It’s an international school teaching sustainable agriculture to people from all over the globe. In addition to learning about the latest in sustainable practices, the university runs a fully fledged banana plantation, supplying all of Whole Foods’ bananas from their 8,300 acre campus. It was fascinating to see how bananas make it from the forest to the box, and through extremely thoughtful agriculture practices, they were definitely the best bananas I’ve ever eaten.
